This was a Christmas gift. The copper core (visible from the side only) really works in distributing heat evenly. I tested this by baking bacon strips that were too many for the tray I was using. The tray ones got crispy fast. The ones in this pan cooked much slower, so I finished them on the burner. This not a complaint, as I have a tendency to burn bacon. I've also used it too stir fry seafood and scramble eggs. It's easy to clean after a little soak, and is pretty enough to leave out. It's a bit heavy, but that's where the helper handle comes in.
