Banana Cider Cocktail

INGREDIENTS

1 oz banana
½ oz guava juice
1 oz lemon grass simple syrup
½ oz lemon juice, fresh squeeze
4 oz Non-Alcoholic Apple Cider
3 oz pebble ice cubes
1 ea basil leaf
1 sprinkle mitmita or berbere (purchase at local spice merchant)

Lemongrass Simple Syrup
8 ea lemongrass stalks, smashed and chopped
16 oz sugar
16 oz water

PREPARATION

Bring water and sugar to a rolling boiling, stirring occasionally. Add the lemongrass to the pot and lets steep for 15 min. Strain the syrup.

The Assembly
Place banana and guava juice to the shaker and muddle until chunky, but not mashed. Add the lemongrass syrup, lemon juice, and pebble ice then shake. Pour into a large wine glass and top off with the Apple Cider. Add a basil leaf and sprinkle with the Ethiopian spice
