Today kicks off National Pride Month & we’ve whipped up some rainbow recipes to celebrate love, inclusion & the LGBTQ+ community.
Once You Pop(sicle), You Can’t Stop
Pro tip: add a bit of your favorite liquor for the most refreshing summer “cocktail.”
Red sports drink or fruit punch
Orange sports drink or orange juice
Yellow sports drink or lemonade
Green sports drink
Blue/purple sports drink or grape juice
Fill popsicle maker 1/5 of the way with red sports drink & freeze.
Repeat with following colors, freezing completely between each layer.
Don’t Be Salty
This may just be the best midnight snack around.
36 pretzel rods
2 16-oz. packages of white or milk chocolate chips
Multi-colored nonpareils, sprinkles, mini M&Ms, or other candy
Place chocolate chips in a microwave-safe bowl & microwave on high for about 1 minute. Remove & stir with a spatula. Repeat in 15-second increments if necessary. (You could also use a double boiler).
Dip a pretzel rod into the melted chocolate & using a butter knife, spread chocolate about 3/4 of the way up.
Dip into topping of your choice (or hold pretzel over a piece of wax paper & shake topping all over).
Set on wax paper.
Repeat with others, allowing to cool & dry for about 24 hours.
Always Waffling About
Best served with yogurt & fruit…or fried chicken. Yeah, you really can’t go wrong here.
2 cups waffle mix (such as Bisquick™)
1 1/3 cups milk
2 tbsp. vegetable oil
Assorted food coloring (red, yellow, green, blue, purple)
Stir first 4 ingredients together.
Separate batter into 5-6 portions (depending on how many colors you want).
Whisk food coloring into each portion & transfer to piping bags.
Pipe each color into your waffle iron in circles, starting from the outside working in.
Cook according to waffle iron instructions.
Killer Cereal Bars
Totally counts as breakfast.
8 cups rainbow-colored cereal, such as Fruity Pebbles™ or Lucky Charms™
10 cups mini marshmallows
3 tbsp. unsalted butter, plus extra (or cooking spray) to grease the pan
Grease pan with butter or cooking spray.
Melt butter & 8 cups of marshmallows over low heat until completely smooth.
Remove from heat & stir in cereal & remaining marshmallows.
Pour into pan, press gently & set aside to cool completely before serving.
