Poor quality
I bought an 8” seasoned steel fry pan in March of 2026. This was to match a 10” steel frying pan purchased in about 2021. The quality of the older 10” steel fry pan is extraordinarily better than the 8” steel fry pan from 2026. The steel surface of the new 8” pan is irregular and unpolished. This surface seems to be pretty much unrefined, almost like it was sold as stamped. The older 10” pan is smooth and polished, inside and out. The new 8” steel fry pan is disappointing.

This pan broke my heart. Wanted to love it.
TL:DR Not as non-stick as cast iron, terrible heat distribution. This pan broke my heart. I was super excited to try it out and was expecting the best. I really wanted a 12 inch that performed as well as my cast iron 10-inch, but without the crazy weight, and with more responsive heat control. I wanted to love it. I'm more than 6 months in with this pan, and the fact is, no matter how much seasoning, it's just not as non-stick as cast iron. I think the reasons for this might be... the texture? Cast iron has more texture which may create better pockets to collect seasoning? Maybe it's actually the difference in hardness of the surface? Or maybe it's the difference in heat retention-- cast iron holds heat so the temp difference when food hits the pan doesn't cool the surface as much? Anyway, if used properly it sits between stainless and cast iron. The other problem is that of all the pans I've owned in my life, I've never had one with such poor heat distribution. I got the 12 inch so it's a nightmare. A smaller pan that is close to the size of your burner might not be so bad. But with this pan, if I put in some pan cakes, they will brown only where (and I mean exactly where) the ring of the burner flame hits the pan. The rest will be white. So you've got to rotate, rotate, rotate every few seconds before you flip. Insane. I've owned cheap non-sticks that didn't have such severe problems with heat distribution.

non-stick surface
No matter what I sear with this pan, nothing sticks to it. I cook a lot of chicken with this pan and the meat slides on the surface.

Awesome, heavy duty nonstick skillet.
I received this pan as a warranty replacement for my original older unseasoned carbon steel pan, and I have to say I absolutely love this one. I used it straight from the bag starting with some bacon, but then quickly progressed to eggs and it’s been totally nonstick and awesome. The pan feels heavy duty and the handle feels great. It’s a lot easier to hold than the original. Very excited to continue cooking on it and seeing how the patina develops over the coming months and years. Thanks Made-in for taking care of me.
