Yes you can make a french omelette on this pan.

I bought these pans because as I was making french omelettes with my nanobond pans but a small part would always stick in the very middle of the pan as I cook on a Breville induction control freak . So I think it was because the very middle of the pan is on the sensor of the cooktop so it would get less heat. I concluded it was because that part was a bit cooler than the ring of the magnet that was a bit hotter. Since this a copper pan I though this would fix this problem. I was right it cooked a french omelette without sticking I was so excited ! I really wanted this to work so I would never have to use any non-stick pans. The reason I gave it four stars is because I'm spoiled owning the nanobond pans and pots, cleaning is much easier and I just can't damage or scratch them. These require much more care the cooking surface is not as smooth as the nanobond cookware. So if what you need is excellent conduction then copper bond is your answer. But the closest thing to perfection in my mind remains my nanobond. That is why I will keep my 8 and 12 inch copper bond pans and 3. 5 and 5 quart sauciers. Thank you again Hestan for another amazing product.

Pleased with my Investment

The pan is substantial in hand; it lays on an excellent sear with worthwhile Fond. I purchased the Hestan cleaning agent, which I’m satisfied with its after cook refurbishment. With a proper preheat and fat technique, everything from eggs to meat glides freely edge to edge. An added bonus is my Hestan collection is heirloom quality.

Best Pans Ever!

These are the best pans we have purchased! They are sturdy, heat evenly and maintain temperature when preparing various types of foods (ie: vegetables, meat, frying). We will be purchasing additional pans from this set. Not to mention, they are beautiful as well!

High performance beauty
