Learning to cook the right way

I love my new signature frying pan. That said, I hope I am using it correctly. It SEEMS like a patina is building on its surface and it seems like food is getting easier to release. So far, so good.

Nice but very hot handle

This is a great size for frying/heating smaller portions. However, the handle gets extremely hot... need more than just oven mitts! And do not as cast iron it is a bit heavier!
