Each elegant MIYABI Koh knife is crafted in Seki, Japan. There, MIYABI artisans merge rich Japanese tradition with expert German engineering and state-of-the-art steels to produce these ultimate kitchen knives. Advanced FC61 fine carbide stainless steel - 61 hardness on the Rockwell scale - provides unsurpassed corrosion and chip resistance. This cutting-edge steel ensures the hand-honed blades retain their impressive sharpness for a long time. Thanks to an innovative, ice-hardened process, the FRIODURx2 blades offer remarkable durability, sharpness, and cutting performance. The stunning blades are finished with a true katana edge, homage to the samurai swords made in Seki centuries ago, and feature an embossed MIYABI logo. Stylishly stamped with a silver mosaic pin, the exquisite octagon-shaped handle feels as good as it looks. The Pakkawood handle supports both Western chopping and Asian rocking cuts - experience ergonomic perfection with each slice.

Beautiful, light, and sharp!

The MIYABI Koh Santoku Knife is my first Japanese knife. It is exceptionally sharp, beautiful, light (106g), and easy to handle. It is small enough to be transported and large enough to be used on a daily basis. The ergonomic handle design has a comfortable and secure grip. Straight out of the box, its edge makes slicing through any ingredient effortless. It is precise and clean cuts every time. The blade and the elegant handle make this knife a stunning addition to my kitchen.

Santoku is my favorite

I love santoku knives, and this one that came in my zwilling pro 8 piece knife block set is a workhorse. It's smaller than other santokus I've used but that gives me control I need to make cutting onions and other things a breeze.

This Miyabi Koh line is so beautiful. It is made from FC61 steel, so it will be durable and extremely sharp. The handle fits nicely in your hand too. This 5.5 inch santoku knife is great to have for chopping, dicing, slicing, etc. It is a very versatile knife that has many uses in the kitchen!

If you are looking for an entry level Japanese knife this is a good one to try. The Miyabi Koh, has a traditional Japanese looking handle that will actually fit comfortably in the right or left hand. Unlike a true D shaped handle, it will not roll for lefties. The blade profile is Japanese but the steel is more German in temperament. It is forgiving, will not chip or nick, but can be honed back to sharpness with ease.

The Miyabi Koh line is one of my favorite and the prep knife is one of my most used knives in the kitchen. It is super sharp so can slice, dice, and chop with percision and the smaller size sometimes feels more comfortable in my hand while using, which is very important.
