Many cookbooks that day they have simple recipes don't actually deliver on that claim. I have made about half of the recipes here so far and they are delicious, and truly simple. I'm not a confident cook, but as a new parent I wanted to learn how to make tasty dishes in order to encourage my child to eat well and enjoy it. I've seen Jacques Pepin on PBS and liked his humble, gentle presence, and admired how he calmly assembled delicious looking food. That's why I chose this cookbook as my starting point. These recipes are so tasty, with a lot of flavor and fresh taste. I can make them with my toddler running around the kitchen and be done before she starts to get into mischief. And she gobbles these dishes up, even the soups. The whole family does. I feel better about my cooking chops and know it's from the lessons I'm learning in this book. We joke that we feel like we're eating at a nice restaurant. And during there pandemic, that's a nice, transporting thing to feel. I also love that he paints as well, and that he's decorated his recipes with his own illustrations.

Classic, streamlined, accessible favorites
I always turn to Jacques Pepin's recipes and cookbooks when I need something simple, elegant, and foolproof. The point of using some purchased ingredients is to give home cooks more confidence; if you can look at a recipe and figure out how to substitute for ingredients you don't have--and you've stocked your pantry/freezer with Pepin's essentials, which have bolstered American and French cooking for generations--you'll be a more confident, relaxed cook. I've learned so much from this approach, and I love how Pepin helps readers apply it to all kinds of dishes from breakfast to dessert. My family loves the black-bean hummus and Pepin's mother's cheese and spinach soufflé's. I adored this cookbook and how it goes into a little more depth and explanation than the great 3-minute YouTube videos. (I recommend Pepin's Zucchini Fans, which my 7-year-old devoured.) :) Confidentially, to the crabby cook: virtually all baking powder sold in the U.S. now is double-acting, so if you do any baking you either a) have it already in your cupboard, or b) will find it's certainly more than a one-use ingredient.

Some recipes use purchased bases, many ingredients
Sad to have bought this book, recipes based on the helpful simple videos online were not included. Instead the recipes have many ingredients. For example cornmeal and cheddar bread has eleven ingredients such as 'double acting baking powder' that there is no other use for and will be wasted.
