great prep knife

This is my new goto knife. The size is perfect fitting into my collection between my paring knife and chefs knife. I love the Western style handle combined with the Japanese blade. It gives me a feel that I am comfortable and familiar with. The offset handle makes it great for working in hand or on a cutting board. The blade is made from high carbon stainless steel that goes through a double hardening process that makes a very durable blade that can be sharpened to a very acute angle. It stays sharp for a long time and is very easy to maintain. I use it for all my vegetable and herb prep.

I love this 5.5 inch prep knife. It is great for smaller kitchen tasks and prep- slicing, peeling, dicing, etc. It is definitely a knife that will get a lot of use. This line is beautiful. It is a great mixture of Western and Eastern techniques. The three riveted handle is very comfortable and balanced. The blade is extremely sharp yet durable.

This well sized knife is perfect to grab for small jobs, and light prep work. Good knuckle clearance, strong blade shape and good width of blade. The steel is durable, strong and nick resistant. This handle works for both right and left handed cooks.

I love the Morimoto designed knives because they are simple yet incorporate all the highlights of a quality Japanese knife. The 5.5 inch prep knife is one of the handiest knives in the kitchen because it performs like a chef's knife but is smaller and easy for cooks of all levels to control and enjoy. The specially formulated steel is corrosion resistant and hard so it is capable of retaining its 9.5 to 12 degree angle use after use. The patented ice hardening process is what makes this super sharp edge chip and crack resistant. A comfortable western style handle makes this knife secure and nicely weighted.

Best of both worlds! A nice mix of German steel and Japanese craftsmanship. Can't go wrong with any Miyabi knives - superb quality, sharp edge, made to last, comfortable grip and handle. A prep knife is a great size to own - between a paring and a Chef. Thin blade that has been ice-hardened. A great every-day knife!

Great complement to a 8-inch chef's

This knife is a great side kick to a larger chef's knife. It handles the smaller tasks and finer slicing of fruits and vegetables. If you use a 6-inch utility but find it challenging with wide onions and thick potatoes, this maybe a better alternative. The wider blade provides a bit more stability when slicing and chopping. And this Miyabi Red Morimoto Edition is a great choice for folks trading up to better knives or who want to see what all the fuss is about with Japanese knives. In this line, the best of East and West cutlery tradition merge under the advisory of the world renowned Iron Chef Masaharu Morimoto. This knife marries Japanese aesthetics and razor-like sharpness with German manufacturing ingenuity. The proprietary steel was created to keep the blade light and strong so it can handle the sharp edge that Japanese chefs expect. A special handle was created using materials that will meet the needs of a professional – it must feel good and true after hours and hours of work; and it must look good, appropriate for a chef, or aspiring chef. This knife medium to lighter in weight; lifetime quality. It will hold its edge and will sharpen beautifully. I strongly recommend hand-washing.

I love this prep knife, it has a narrow tip like a parer and still gives you knuckle clearance for chopping. Nice handle for right or left handed people, the red spacers in the handle adds a nice pop of color.

Best of Both Worlds

I love the prep knife, it's so versatile for all those small tasks like small onions, garlic, and herbs. I think it's pretty cool that I can get a razor sharp Asian knife, that is made from super tough German steel. The handle is comfortable just like my German knives too.
