Fiesta Time!

I have been cooking from this book for a few months now, and I can definitely say Danny's recipes have really enhanced my summer gatherings. If someone is looking for a signature drink, this book offers many refreshing options. But it also addresses the growing needs of those who want a "grown-up," yet festive nonalcoholic beverage. I would therefore recommend the book to any aspiring mixologists looking for some unique liquid refreshments. But the book also offers some really solid recipes for the rest of a meal that are not overly complicated, and deliver big flavors with an obvious Mexican slant. The marinade for the Arrachera Steak really packs a punch with simple ingredients available at any grocery store. The proportions in the Pico are perfect, and the recipe has a tiny variation from the norm that makes quite a difference in the finished product. The Party Beans are a revelation, in that no one would ever guess canned beans are used, and they taste virtually indistinguishable from their long-simmered cousin. And finally, the recipe for the Elote Salsa...so good I repeatedly serve it as a side salad. There are plenty of other recipes that I have enjoyed: the cilantro-forward green rice and the easy peasy Blender Salsa to name just a few. All the party and make-ahead suggestions are invaluable, as are the suggestions for new uses for common pantry ingredients. In addition to the core of this book as a collection of recipes, it is one of the most uplifting and community building books I have read in a long time. I am thankful Clarkson Potter provided me with a free copy of this book in exchange for my objective and unbiased review. All opinions are my own, and based solely on my experiences using this book. I enjoyed reading it and am happy to add it to my permanent collection. I also intend to gift it for several housewarming and graduation events I have coming up. It's a perfect gift for anyone who loves Mexican food and hosting!

Versatile, Accessible, Delicious!

I have said it before, I love cookbooks. Especially the ones I can open to almost any page and find something yummy to cook. Danny Trejo’s second cookbook, TREJO’S CANTINA, is one of those cookbooks. There is something for everyone, whether you drink alcohol or not, eat anything or are a vegetarian. In his introduction he says he “wants to introduce Mexican food that Angelenos like me (Trejo) eat every day… fun and easy food with big bold flavor…” Recipes to “riff” on that you can swap ingredients on. There are so many great recipes in here, for every day or a crowd! My Mom and I have the Queso Fundido on our list for when I visit and the family gets together, then Fight Night Nachos... just for the family, Shrimp or Crab Tostadas are amazing. The Carne Deshebrada is easy, versatile, and delicious. Throw in a wide variety of sauces, beverages for everyone, and this is a fantastic cookbook (yes, I will be finding a spot in my car to take this one on my summer road trip to stay with my family… it’s a great one to share!). Now I need to grab his first cookbook! Thanks to Clarkson Potter for the gifted copy. All opinions are my own and freely given. #DannyTrejo #TrejosCantinaCookbook #ClarksonPotter

A party in a book.

This book has all of the makings of a great party. Contains recipes for cocktails both alcoholic and non-alcoholic, appetizers, and meals. The first recipe I made was the 'Elote Salsa' which was great as a salsa but also amazing on tacos! All of the great looking dips and salsas makes me want to make them all, as well as all the different drinks and cocktails and have a big party. A perfect cookbook for the summer party season. Delicious Cantina Style Mexican Food

Trejo’s Cantina by the iconic Danny Trejo has a variety of great cantina recipes for snacks & sides, salsas, sauces & dips, drinks and main events. I especially enjoyed reading about Trejo’s past and the section regarding The Cantina Pantry with The Holy Trinity made up of Cilantro, Onion and Lime. That’s three of my favorite Mexican ingredients and they’re used throughout this cookbook and these ingredients are “non negotiable”. The first recipe I made is the Badass Blender Salsa, which came out fantastic. It tasted just like great restaurant salsa I’d be eating a high quality Mexican restaurant. The chipotle peppers in adobo sauce add some spice along with smoky flavor that really put the salsa over the top. The ingredients were all approachable, the recipe not difficult to follow and it made enough fresh salsa to last the entire week. I’m looking forward to making the Arrachera Steak this summer on my grill. It’s a skirt steak recipe and makes it a hybrid of Argentina chimichurri and Mexico’s lime, chile, cumin marinade. With the grilled skirt steak alongside chimichurri sauce and fresh corn tortillas, this recipe is sure to be a winner. I myself do not drink alcohol and I appreciate that Danny dedicated this book to the recovery community and has plenty of nonalcoholic drink recipes in this cookbook. I appreciate the honesty he puts into this book and its filled with delicious cantina recipes that will be a hit in your home. Great for a party AND great for a weeknight

My family eats Mexican (probably more accurate, Tex-Mex) food pretty regularly. While the food is often a home run with my kids, it can be easy to get into a rut with basic tacos, fajitas, and enchiladas. “Trejo’s Cantina” by Danny Trejo provided some great ways to mix up our routine. My family devoured the Chicken Tinga Tostadas from the book. The chicken thighs simmered in a simple sauce that made our kitchen smell fantastic. Best of all -- I was able to put the meal together after work and we still ate at our normal dinnertime. The sub-recipe for pickled onions came out perfectly within 30 minutes. Using a tostada rather than a hard taco shell or tortilla also was a nice change of pace and one that my kids declared “sooooo fun!” To go along with the tostadas, I tried one of the mocktails from the book. The book has a good balance of drinks with and without alcohol and it was nice to be able to make a booze-free drink my kids could have with us. The kids loved the Killer Kiwi Lime Agua Fresca, though it is hard to go wrong with something that is topped off with Jarritos lime soda. The back cover featured an incredibly enticing picture of queso fundido. The recipe is simple and the cheese was velvety smooth. The chorizo was good, but take care to not put too much on. I would have cut this back a bit, as the chorizo flavor was slightly overpowering the cheese. Overall, this is a dip I would definitely make again. My daughter loves black beans and she was a big fan of the Big-Batch Party Beans. We had these to go long with tacos (we really do eat Tex-Mex food a lot) and she loved them. This came together quickly and the chile de árbol gave provided great flavor without making the beans too spicy. The single slice of bacon made a huge difference – the extra fat made the beans taste significantly richer than you’d expect from otherwise simple ingredients. To go along with the beans and tacos, I made the Manzana Verde mocktail. The fresh apple flavor was enhanced by cinnamon-honey syrup (another sub-recipe). I am going to keep this syrup on hand during fall months, as it would work really well in hot cider and apple-flavored cocktails. The book’s cocktail and mocktail lineup is enough to check it out. We have not had a clunker recipe yet and I am excited to try other recipes, including a green rice, street tacos al pastor, and Tijuana-style beef birria. Clarkson Potter provided me with a free copy of this book; the opinions are my own.

A wonderful surprise

I'm always skeptical of the quality of celebrity cookbooks, but this one was a wonderful surprise. Trejo's Cantina is full of humor, warmth, and celebration of heritage and location with solid, well-planned recipes throughout. I love the cocktails served with a side of frank conversation about responsible alcohol consumption and equally lovingly crafted alcohol free recipes. We've already tried and enjoyed several of the recipes, and have many more bookmarked for the future. This book would be a great buy for a fan of Trejo's, a home bar enthusiast, or someone who loves California-Mexican culture and food. Cocktails and Snacks

Clarkson Potter provided me with a free copy of this book; the opinions are my own. This is a nice little cookbook with wonderful recipes for alcohol and non-alcohol cocktails. There are also snack, side and main dishes. I did make a couple of the non-alcohol cocktails (Banana Champurrado and Red Alert) and I was pleasantly surprised. I am looking forward to making more cocktails and some of the sides, snacks and main dishes.

Great cocktails and mexican bites

I had no idea Mr. Trejo was so talented. Not only is he a great actor but who knew he could get around in the kitchen as well. If you love mexican cuisine and looking for something a lot different with straight forward recipes then definitely pick up Trejo's second cookbook. I have to admit, i don't have the highest hopes for cookbooks done by celebrities. However this one is worth it. First off, this book is half cocktails/drinks and quite a few are alcohol free. Great way to get some mocktails for those that don't like to imbibe. These cocktails are sure to impress. Definitely different enough than just your plan margarita and not all sugar filled either. The elote salsa recipe is worth getting the book alone. It's soooooo delicious. My wife enjoyed the "Badass Blender Salsa" all week long. She's a salsaholic and she approved. I also made the Tijuana style beef birria. The family downed the tacos and i was able to use the meet on a salad for the rest of the week for lunch. If you're looking for a new mexican cook book this is a great option. Many recipes to impress and entertain. Clarkson Potter provided me with a free copy of this book; the opinions are my own.
