So Delicious!!

This cookbook is fantastic! It is great for newbies new to the game or for OGs like me who are looking for new ideas. I believe even carnivores who are interested in incorporating a Meatless Monday here or there will enjoy these recipes. The recipes are delicious, adaptable, and relevant to all! I have made several of the dishes, including dessert and none have disappointed. Thank you, Chef Charity. This cookbook is a true blessing!

Beautiful Recipes, Approachable Vegan Food

Have you ever thought about eating less meat and don’t know where to start? Maybe it’s a bit overwhelming? I know it has been for me. Every time I think about consistently adding vegetarian meals, I don’t know where to start and get overwhelmed, especially since I have family members who insist that all meals should consist of a meat for protein. Charity Morgan’s UNBELIEVABLY VEGAN can help with that. From her introduction to the recipes, Morgan gives us the tools to become less dependent on animal products and more plant-based, or plegan as she calls it. She isn’t preachy and doesn’t insist that everyone must follow it, but she gives you the tools, including questions to consider on your journey. Morgan also discusses things you should have in your kitchen to be successful and points you to the section that allows you to make mix and match bowls as an easy place to start. Full of beautifully photographed recipes that look and sound delicious, UNBELIEVABLY VEGAN give you a place to start, whether your goal is to become fully Vegan (Plegan) or to have more plant products and less animal products in your diet. Morgan’s goal is for you to create meals that are so flavorful and flexible that no one will miss the meat. I am hoping that I can slide many into our regular rotation and make my family realize that there are tasty options out there. I think the Taco Salad in baked tortilla bowls (page 152) and the Vegetable Pho (page 183) are going to be tops on our list. Every time I flip through, I find more recipes I want to try! I highly recommend this cookbook, even if you have no plans to make lifestyle changes. These recipes will fit into your life no matter the stage. Thanks to Clarkson Potter for the gifted copy. Possible errors?

I am a professional home baker with over 30 years experience and the very first recipes I made were the cream cheeze and the Oreo cheezecake. Anyone who has worked with agar agar would be skeptical about the amount of 3 tablespoons to 1/2 cup of water (for the cream cheeze recipe). You cannot properly process (stir and heat) the agar agar to proper temperature when the ratios are wrong and you are left with a paste before you even begin. I should not have continued and used this for the cheezecake recipe. I knew there would be a problem. The cheesecake did not set up. I should’ve know better. Not a good introduction to what could actually be a lovely cookbook. I’m quite turned off and probably won’t attempt another recipe.

Family Friendly Vegan Recipes

I was interested to try out the recipes in this book since we eat a lot of vegetarian meals as a family, but we don't eat many vegan meals. The author and her husband have kids, so the recipes are family friendly. I tried the cream of broccoli soup in bread bowls and the chocolate chip cookies. The soup was excellent. The cookies tasted really good, but they didn't look like the nice thick cookies pictured in the book. This difference may be related to what kind of vegan milk and butter you use for the recipe. I did use homemade almond milk. My family enjoyed the recipes, and I have several more marked to try. I've received a free copy from Clarkson Potter in exchange for a free and unbiased review.

Must have Vegan goodness !

I come and go from being vegan, vegetarian and eating a little meat. There is never a set plan or anything I just like to listen to my body and adjust my diet as I see fit. I have spent over a decade being vegetarian and years being vegan. Usually, I declare a month a Vegan month and its always great to invite new plant based recipes into the family meal mix. Of course, the post - holiday/ beginning of the year must have health kick is the perfect time to switch things up and go vegan so I was supper excited to see Charity Morgan's delicious new cookbook come out at the perfect time. I first saw Charity on the show The Game Changers feeding her pro-football husband and his team mates and thought how great it would be have her as my personal chef ! Well,luckily I can at least have her recipes. This is a fantastic set of over 100 recipes broken into seven chapters. They are : 1) Fundamentals 2) Kickoff Breakfasts and Brunches 3) Soupior Bowl 4) Crowd Pleasers 5) Playmaking Mains 6) Sideline Sides and 7) Sweet Victories There are also a number of sections on vegan philosophy, transitioning to a plant based diet, foods to watch out for, must have pantry items, and a great section on techniques such as caramelizing onions, cooking grains, deglazing pans, roasting and soaking beans to name a few. The recipes are diverse and international. There are American comfort foods, Creole and Latin, Asian inspired goodness as well as plenty of delicious desert options that will amaze you they are even vegan. We started out by making the Chili Con Chili recipe. You had a choice to use lentils, plant based meats or a Walnut Chorizo for the "meat" part. I decided to go with a plant based meat as well as the lentils mixed together. What drew me to this recipe was the amazing mix of spices in the spice blend. It included paprika, chili powder, coconut sugar, cumin, ancho chili powder and cacao to name a few. I saw this and thought this woman knows how to layer flavor ! I threw everything into an Instapot and it was a quick and easy meal to put together. I added tomatoes, cilantro, scallions, avocado and vegan cheese on top to serve. It was a big hit with the kids and everyone had 2nd and 3rds for days. Next up I made a desert. The Salted Caramel Apple Crisp. Winter time is crisp time in this house and this did not disappoint. This is a good time to add that just because something is vegan doesnt necessarily mean its healthy ! You can still have a decadent desert and not hurt animals in the process. This followed a pretty traditional crisp route but switched out the ice cream or cream with non dairy options. I chose an oat milk based ice cream to top. I loved that she used graham cracker crumbs in the crumble. They added a great flavor I was not used to. The salted caramel recipe that goes with this is decadent and is cashew based. I would suggest though that it is too much . You are basically laddeling a cup of sugar across the crumble which while insanely delicious just makes it too sweet. If you see any type of caramel sauce as your personal savior go for it. Next up I made the kids the Fluffy Vanilla Pancakes which came out great. In the past when I made vegan pancakes I simply just didn't add the eggs to whatever recipe I had on hand. This recipe is a game changer though as it uses a combination of apple cider vinegar and baking soda that made them into the fluffiest pancakes I have ever made. Great idea ! I served them with banana and blueberries and they were inhaled quickly. Lastly, I made the tofu scramble recipe that had the nice touch of adding cut up vegan sausages and vegan cheese. This is a pretty traditional recipe and it is great when you want to clean out the vegetable drawer. I added mushrooms, spinach and red pepper and served ti with a hash brown and toast. You will not even for a second miss the eggs. Unbelievably Vegan is a fantastic addition to my vegetarian cookbook collection and will be on heavy rotation this year and more to come for sure! Full of vibrant goodies

Unbelievably Vegan is the cookbook to reach for if you are a meat or cheese lover who is contemplating a lifestyle change. The recipes in this book deliver on the flavors you dream by using non-animal ingredients in  interesting ways.   There is a recipe for "butta biscuits" with creative twists such as adding shiitake "bae'con," or adding citrus zest for a shortcakes vibe. This recipe is relatively simple with a few ingredients.   There are also many multi-step recipes with layers of flavor. The spinach and roasted tofu benny (benedict) involves blending a cashew and tofu based hollandaise, marinating and roasting tofu, steaming spinach, and then assembling the sandwich. Is this worth all the effort you ask? If you are missing eggs, and nostalgic for that smoky meat flavor, this dish has you covered. The hollandaise has kala namak- black salt with sulfur for that yolk taste, and a smoke signal sauce for the tofu which brings out the bacon notes.   Throughout the book, there are tricks to turn your best non-vegan delights into plant based and healthier options that have oomph.  The eggless French toast is based on a custard of full fat plant milk, chickpea flour, banana, and a flax egg – lots of flavor, little guilt!   The thing I was most excited to try was the beer battered fish and chips.  The author uses canned banana blossoms as a fish substitute. It wasn’t easy to find the banana blossoms, but they have a  miraculous fish like texture, and I am happy to have found this unique ingredient.    Whether you are a seasoned vegan, or just dipping your toes in, you will be satisfied with the surprisingly luscious treats in this collection of recipes. Incredibly flavorful and fun vegan food!

Charity Morgan brings vegan dishes to life with her style of cooking. I was intrigued about learning more from someone who feeds professional football players vegan food. Her food is satisfying and has so much depth of flavor. She layers flavors and brings out the best of vegetables and mixes in some filling vegan proteins. What makes these recipes so great are all her dressings, spices, and marinades. Recipes like Puerto Rican sofrito, kimchi, Creole-Cajun seasoning, and citrus-miso dressing take the vegetables to the next level. I especially loved her sriracha cauliflower walnut lettuce cups, with all the different textures and great seasonings. There’s a huge variety of dishes, and even a dessert chapter. This book is perfect for vegans or anyone wanting to introduce more vegetables into their life. I especially love her encouraging and flexible Plegan style. Satisfying Plant-Based Vegan Meals

This cookbook by a plant-based chef is a welcoming, friendly approach to eating vegan. It's even great for those that aren't 100% vegan but wanting to have some meat-free days. Charity provides the knowledge and essentials needed for preparing vegan meals that are satisfying and family-pleasing. I'm amazed that she has come up with many recipes with great flavors where one won't miss not having meat and dairy. Many comfort foods we've grown up with are provided with recipes for vegans. I zeroed in on the walnut chorizo. Just wow. I wouldn't miss the real chorizo with this recipe with fantastic flavor. This can be used in the breakfast taco recipe provided in this cookbook. It's very satisfying and filling. For those craving curry, the pumpkin red curry rice bowl looks really good. The photos throughout are very eye-pleasing.
