I use this all the time to make omlette and it does not stick as long as I let it heat up well and then put some oil and coat it well.
The absolute best cooking pan I ever purchased!!
This is the absolute best cooking pan that I ever purchased!! This is a high-quality, strong, heavy, and durable pan. My food cooks well in this pan (i.e., not too fast). I use this pan everyday!!!
Sears well
It fit three large steaks, and seared them well. It came out great.
Skillet
I grab this skillet for everything! Good quality and easy to handle and clean. Also bought it in the smaller size.
Very poor quality
I purchased this and three other items in this signature stainless collection because they aren't available individually in the contemporary line. The quality is visibily different, and each item came with scratches on the bottoms as if they were slid across a burner and with some deeper gouges on the sides. If this was my first experience with Calphalon I'd never buy again. The seams in the lids are also lower quality. There is NO way I'm giving these to my wife for Christmas. If this is intended to be a value line product, then don't waste your money for just a name. With the scratches these came with, I can already tell what they'd look like after some basic use.

Great size
I don't know what I am doing wrong but everything sticks to this pan. I use it on gas burner, it doesn't matter what tempture I use or what oils I use. It all sticks. HELP!

Nice pan
It's a bit heavier than I thought, but not as heavy as iron skillet pan...so I'm good. I was a bit worried reading the reviews saying everything sticks to the pan, but surprisingly its not that bad actually. cleaning does require more labor...and patience. I can clean it easily only after I put the pan in the water for a while.

Love the durability!
I got the Calphalon Signature omelette pan because in our family we eat a LOT of eggs. So far we have used this pan to make omelettes and a frittataI love how the pan's 5 layers of metal cook all the ingredients at a nice, even temperature. The pan is large enough to cook dinner in as well. We made a one-pot chicken meal recently. All the chicken and vegetables fit nicely in the Calphalon pan, so I didn't have to use up extra valuable time to cook everything in batches. I love the thickness of the stainless steel. You can tell it is going to last a long time. A nice feature of this pan is that the brushed stainless steel long handle stays cool while you're cooking on the stovetop. The handle won't burn my hand after being on the stove long enough to cook omelettes for my family of 6! I also love how easy it is to clean. This mom of 4 appreciates being able to just throw the pan in the dishwasher! I like this pan because it is high-quality, durable, and cleans easily. The stainless steel give it a polished, elegant look. It has the possibility to be used to cook a variety of foods, not just omelettes. While I received this product for free, the opinions and thoughts included in this review are my own.
