Very nice pan for an old bachelor...
Heats up fairly quickly and evenly and after a good soak cleans up nicely. My only complaint is that the handle is too narrow for my big hands, making it hard to hold onto.

We appreciate your feedback and are encouraged by your high expectations from Circulon. You’re correct. The SteelShield mesh at the bottom of the pan does allow foods to stick to it. That's actually the SteelShield doing its job- it's bringing together the heat from the pan, your oil, and your food to sear and caramelize like you can’t do in a normal nonstick pan. There is a slight learning curve when using any new cookware- we took a note from Stainless Steel pan users- once you place your food in the preheated pan with some oil, leave it there- don't try to move it like you would in a full nonstick pan. Allow the SteelShield to do its job and create those amazing flavors usually only found in stainless steel cooking. Once the moisture and flavors are sealed in, your food will release itself. You may see some browned bits left behind on the mesh- this is fond. (Basically awesome bits of flavor you created.) You don't want to lose that- just add some liquid (think stock, butter, wine) and deglaze your pan. Scrape up those delicious bits to make a delicious pan sauce while cleaning your pan at the same time!
