Difficult to use.
I carefully followed instructions as to how to use the pan. No matter what I tried and no matter the stove burner temperature, nothing helped in preventing the pan from sticking. I know it is not listed at non-stick, but each time I used the pan, food stuck and was hard to remove. Seems like a lot of energy to use for cooking in such an expensive pan.

Can’t imagine our kitchen without this set
This is great cookware. Although it’s pricey, it’s worth the cost to have high quality cookware that will last a long time and doesn’t crack or shed microplastics into your food. Food doesn’t stick, it heats up quickly and is easy to clean. Highly recommend.

The Upgrade…?
It was time to replace my large multi-use everything skillet. Went from Calphalon William Sonoma edition that is no longer a a m to Hestan’s top of line Nanobond titanium. Make sure you read the instructions or introduction on Hestan, these pieces are not nonstick surfaces. The craftsmanship is beautiful. The flushed rivets are very eye catchy, the handle doesn’t over heat, I read a reviewers complaint about the edges not being completely incapsulated, I had to verify this myself and it’s true but it doesn’t affect the product or its ability to perform. As long as the exposed rolled edges don’t rust I will say there’s a good reason for this design. After first use my pan developed the discoloration mentioned in the intro book that came with it, knowing that it can easily be brought back to its original luster is good enough for me to not complain about this. The pan comes to heat rapidly which is nice. It is imperative that some type of oil, butter, bacon grease etc. is used, hard lesson. I like to look at my food while it cooks, I wish there was a glass lid for this pan not just stainless. And now for the most impressive part, the bottom of the pan has no scratches after using an electric stove. I’m a believer that the nanobonding works.

Discoloration After One Use
For the price, I am disappointed that there is discoloration after one use. I used oil and butter to make eggs and spent about 15 minutes trying to clean the pan. I was able to get the residue off but still have some weird markings which I am not happy about. Maybe this is normal but it is making me think twice about my purchase and about buying any others in the collection.
