PERFECT SIZE and SHAPE

PERFECT SIZE and SHAPE for deboning meat. It works against bones really well, and does an excellent job. The knife is the perfect size, and much smaller than a chef's knife, which makes it easy to control.

It’s okay…

Sharp, beautiful piece but the handle is not as comfortable as the Miyabi I have. For the price, I expect more.

The best knives

I have had a Shun kitchen knife for 12 years now and just added two new ones. They keep their sharp edge longer than any of my other knives. The handles are ergonomic and won’t slip even if your hand is wet.

Most used knife in my kitchen

I bought one of these a few years back and I love it. It’s small, dependable, sharp and great for precession cuts. I use it for fruits, vegetables, herbs, and small cuts of meat. This little knife is a versatile powerhouse. It’s the work horse of my kitchen and usually the first knife I go to.

Honesuki

Is it a single edge blade and is there a left handed version. I have a chef knife with the d handle and am wondering if the company accommodates left hand. It is particularly important for single edge knives but I don't see which one of yours are single edge, including the honesuki. I would love to have an all shun set in my kit. Thank You Chef Holtmann
