Homemade tastic

Great for beginners who need visual assistance with bread prep and making. Only downfall is book binding, I heavily use this book and am about to buy my second copy because other is coming apart.

Grams absent from all recipes.

Take a peek at most US-based bread-baking internet forums, and most discussions are in grams. Likewise, over the last two or so decades, nearly all the books on the subject have started using grams, some of them exclusively, omitting ounces and cups. Weighing your ingredients guarantees reproducibility that cannot be achieved using volume-based measures like cups. And using grams ensures precision and ease of scaling. Yet in 2016, America's Test Kitchen still clings on to a mid-century mindset, when metric system didn't exist, and cups and teaspoons were the only thing to measure with. Sure, they threw in the ounces for those who insist on weighing, but grams were relegated to a conversion table in the back of the book. And that's too bad, as the book is otherwise well-written, beautifully photographed, and each recipe has the trademark "why this recipe works" section that gives useful information for the baker. Sure there is a missing table of contents, and yes the ingredients are printed in faint orange that becomes invisible in bright settings, but overall, this would have been an ideal book for a beginner or even an experienced baker. Still, skipping grams in the year 2016, is such a major omission, that I cannot recommend this book knowing full well, that there are plenty of similar books out there that do use grams.

A must have: well illustrated and perfect results

I'm glad I bought this book a month ago to keep my daughter busy during the quarantine. It is very well written and illustrated. Everything is explained using step by step pictures. It is also very educational and contains so many interesting tricks. The science behind everything related to bread baking is explained and all the recepies are spot on. It is so explained and perfectly detailed that it leaves no room for failure. It allows you to obtain artisan bakery type breads at home. My daughter made so many different recepies already. They were all to the point and so tasty. This book made her fall in love with bread baking. You can't help but fall in love with this book. Everything in it is perfect and it's an easy and interesting read. I would recommand this book to eveyone.
