The Chef'sChoice CrissCross® sharpening technology uses 100% diamond abrasive wheels that simultaneously sharpen into and out of the knife's edge on each side of the blade for a superior, burr-free razor sharp edge with a durable arch-shaped finish. On opposite sides of the edge, the sharpening lines combine to form the "crisscross" pattern that shapes the microscopic teeth.

Overall performance.

I ordered this product and would NOT recommend it. After many, many, many cycles of back and forth, my knives are only slightly better than they were before. They are by no means CHEF SHARP!!

Easy expert sharpening - Never have a dull knife!

I've had this sharpener for several years since seeing it recommended in a credible cooking magazine. My knives rival the sharpness at the custom knife stores. Unbelievably easy to transition older german knives to the Japanese blade angles and works great on serrated bread knives as well. Never have a dull knife again!
