Great knife

I really like Henckels products. This knife cuts beautifully. I haven’t yet tried it on a larger project like butchering a deer but I think it will do great. The handle is slightly larger than other knives of this brand I’ve had, so my husband can probably use it more easily.

Heavy

This is a very sharp knife and seems to be of very good quality. Having said that, it is a very heavy knife, and heavy is not necessarily better when it comes to boning or filleting. Also, the blade is not flexible, so if you are looking for that attribute in a boning knife it is not the knife for you. Be very careful when you open the package to remove the knife; it is needlessly difficult and you have to be extra careful not to cut yourself.
